Recipes with Fruit

I am really looking forward to sinking my teeth into all of the fruit that is ripening on the trees! As I think about all of my favorite fruits, I also start thinking about all of the delicious recipes with fruit. I thought I would share some. A lot of the recipes are as simple as throwing a peach on the BBQ and adding a little glaze and some are much more involved. There are so many ways to enjoy or preserve your favorite fruit. I think I will start simple and share grilled peaches.

 Grilled Peaches - the delicious possibilities are endless!

Grill your favorite peach variety and serve as a dessert
-with ice cream, whipped cream or yogurt
-topped with fresh blueberries or strawberries
Or serve as an appetizer or side dish
-with chicken or fish or on a burger
-topped with crumbled blue cheese

Basic Recipe for Grilled Peaches
4 firm ripe Freestone Peaches with peel, halved or cut in wedges and pitted
Preheat the grill to medium high. Lightly oil the grill grate. Place the peaches on the grill, flesh side down. Cook for about 5 minutes, or until the flesh is caramelized.
Turn peaches over and cook for another 2 to 3 minutes.
Peaches should be soft and golden in color.

Optional sweet glaze for desserts
3 Tbs. butter, 1/2 tsp. vanilla or a splash of dark rum, 3 Tbs. brown sugar and 1/2 tsp cinnamon

Optional savory balsamic vinegar glaze
3 Tbs. white sugar, 3/4 cup balsamic vinegar, 2 tsp. freshly ground black peppercorns

Heat glaze ingredients in a smal saucepan until the glaze is thick and syrupy, about 5 minutes. Baste peaches with the glaze before and during grilling. Serve the peaches drizzled with the remaining glaze.




I don't know about you, but my mouth is already watering, just waiting for the peaches this summer!


Fresh Cherry Cobbler
Preheat the oven to 350 degrees.
Place 1/2 cup butter in a 9x13 inch baking dish and
place in the oven to melt while the oven is preheating.
Remove as soon as the butter has melted.
In a medium bowl stir together 1 cup flour, 1 cup sugar and 1 tsp baking powder.
Mix in 1 cup milk until it is blended well.
Pour the battre into the pan over the butter, do not stir.
Mix 2 cups pitted cherries with 3/4 cup sugar and 1 tbs. flour.
Pour cherries over batter evenly, do not stir.
Bake for 50-60 minutes. A toothpick should come out dry when you check to make sure it is done.
Enjoy!


Blueberry Buckle

In a bowl cream 1/4 cup butter and 3/4 cup sugar, beat in 1 egg.  Combine 2 cups flour, 2 tsps. baking powder and 1/4 tsp salt. Add to creamed mixture alternately with 1/2 cup milk. When mixed well, fold in 2 cups fresh blueberries. Pour into a greased 9 inch square pan. For a topping combine 2/3 cup sugar, 1/2 cup flour, 1/2 tsp cinnamon, cut in 1/3 cup cold butter. Sprinkle over blueberry mixture. Bake at 375 for 40-45 minutes or until a toothpick inserted comes out dry.
